Scrambled Egg Muffins Recipe Ingredients

  • 1 1/2 cup chopped ham
  • 4 eggs + 16 egg whites
  • 1/2 cup chopped onion
  • 4 cups chopped green pepper
  • 1/2 teaspoon hot pepper sauce
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon garlic powder
  • 1/4 cup shredded sharp cheddar cheese

Scrambled Egg Muffins Recipe Directions

  1. Preheat oven to 350°F.
  2. Brown ham; drain well.
  3. In a bowl mix eggs with onion, green peppers, salt, pepper, and garlic powder.
  4. Stir in ham and cheese.
  5. Spoon 1/3 cupfuls into greased muffin cups.
  6. Bake at 350°F for 20-25 minutes or until a knife inserted comes out clean.
