Carbs Are the Enemy & SANE Carbs are the Most Important Aspect of a Going SANE

SANE Carbs are Non-Starchy Vegetables, which are the vegetables that can be eaten raw. For example, corn, potatoes, and many root vegetables cannot be eaten raw, so they are starches.

You do NOT need to eat SANE carbs raw. It’s just useful to know that if a food gets most of its calories from carbs, and it can’t be eaten raw (corn, potatoes, wheat, grains, and legumes), it is likely inSANE.

Both fresh and frozen Non-Starchy Vegetables are excellent choices. They should make up the majority of what you eat.

Deep green vegetables such as spinach, kale, romaine lettuce, greens, broccoli, and so on are the best of the best when it comes to Non-Starchy Vegetables.

When it comes to cooking, do “whatever” it takes to get as many Non-Starchy Vegetables into your body as enjoyably as possible.

A serving size of green leafy vegetables is about the size of both of your hand. For other Non-Starchy Vegetables, a serving is about the size of your hand. If cooking makes the veggies shrink, a serving is about the size of half your hand.
